Just out of curiosity how much are you all planning on writing about this course in your personal statements? I'm not too sure how much I should write about my experiences with the course and if our details are worth mentioning if the admissions officer would want to see samples of our work. What do you guys think ? thank you.

As an example of what you have done outside of maths lessons, I would put it in. Especially if you can say how much you have enjoyed it :-) Admissions tutors like to have evidence that you really enjoy maths and are keen to learn more about it - doing stuff outside of your lessons is a good example of this.
I would not worry about being asked for samples of work - in my experience people applying for maths are not usually asked to do this (Not much point, because surely you would hand in a perfect piece - unlike art/english say).

I just wanted to check that mentioning our involvement in the course is not likely to work against us in terms of offer? E.g. our STEP requirement being increased due to the extra practice?

Your STEP offer will not be increased (there are standard offers!) Participation on the course will be seen as an indication of interest and keenness and make it more likely that you will get an offer in the first place (which will still be the standard offer!).
